Not all dried elderberries are the same. We use exclusively Sambucus nigra — the European elderberry species that has been used in traditional European kitchens for centuries. Many cheaper dried elderberries on the market are a different species (Sambucus canadensis) or are mixed with stems and debris.

Can I eat dried elderberries raw?
No — dried elderberries should always be cooked before consumption. Raw elderberries contain compounds that can cause nausea. Cooking (simmering for at least 15–20 minutes) breaks these down and makes them safe to eat.
How do I make elderberry syrup?
Simmer about 1 cup of dried elderberries in 3 cups of water with cinnamon, cloves, and fresh ginger for 45–60 minutes. Strain, let cool slightly, then stir in honey to taste. Store in the fridge for up to 3 months. One pouch makes multiple batches.
What species of elderberry is this?
These are 100% Sambucus nigra — the European elderberry species traditionally used in cooking. We do not use Sambucus canadensis or any other species.
How should I store dried elderberries?

I like to make my own Elderberry syrup and use it for many things.... not just as a cure for coughs and colds or sore throat... I also use it on my yogurt or even as a dessert topping.... so yummy! I boil the Elderberries and add a cinnamon stick, a few dried cloves and organic ginger (optional) until the water is reduced by about half. Take out the cinnamon stick and cloves and ginger and then and add raw honey (to taste)... It is so nice to have it handy and ready in the fridge and is far cheaper than purchasing Organic Elderberry syrup! The plus is that it lasts quite a long time in the fridge because of the honey and tastes great.
